California BLT's

As far as I know, everyone loves a good sandwich. My personal favorites are BLT's, I love adding my own little spin on things. It not only makes it fun but it makes it a new idea you can share with friends and family. This my friends, is called the California BLT and is a perfect lunch for a nice sunny day.
What you are going to need. (Serves 4)
12 thick-cut slices smoked bacon. (I prefer applewood smoked)
8 slices of Brioche bread cut 1/2 inch thick. If brioche is unavailable Texas Toast should be great as well
1/2 cup mayonnaise, Such as Hellmanns.
1 table spoon cajun seasoning
4-8 green lettuce leaves, bib lettuce works amazing, gives it a nice refreshing crisp.
2 ripe Hass avocados, juice of one lemon, to prevent oxidization
2 large ripe tomatoes thickly sliced.
Salt and pepper.
Now here is the method, I found works best. Sure go ahead and do it the way you are comfortable with. I prefer cooking my bacon in the oven on a sheet tray, I feel it cooks evenly compared to a saute pan. It should take about 15-20 minutes depending on the thickness of your bacon, at 400 degrees. Drain the grease on paper towels, and set aside. Add mayo into mixing bowl with 1 tablespoon of cajun seasoning, add more if desired. Or none at all I enjoy putting spins on things like I said earlier. The spice from cajun works wonders with sweetness of the ripe avocados.
For the bread, place the pieces of bread on a sheet try and into the oven and toast for five minutes, flip over and toast an additional minute. Now remove bread and spread 1 tablespoon of mayo, or however much you prefer. Place your lettuce over the mayo, peel your avocado and slice I prefer 1/2 inch thick slices. Take your bacon from before place over lettuce top with your avocado and there you have it.
